If an enemy unit contacts an artillery unit that's uncommitted and in the Reserve is a Combat fought?

Yes, the artillery will fight and will suffer the limbered artillery penalty for “Attacked from Rear or Limbered Artillery” cited in 6.3.1.

What about Specialty Companies (e.g., sappers, rifles), are they just 'swept away'?

Actually, presently they are effectively ignored – much like Formation Commanders – if not committed (and thereby attached) to a Unit. So there would be no consequence to them and they would remain available to be committed.
