Can a cavalry unit react to an order conversion by declaring its own order conversion, even if it wasn't originally planned? For example, to intercept a charge against the artillery of its parent formation.

Order Conversions are announced and happen simultaneously, so the answer is… sorta.

Obviously players aren't going to scream out their order conversions over the top of each other speaking. But the notion is that all order conversions are declared and then executed, thus, if an opponent declares an order conversion, you could also declare one, but the targets must be valid before anyone is moved and the movement happens simultaneously.
